Viti Prasad, the proprietor of the fictional Sweet Chemistry Bakery in Angel Harbor, is a former industrial chemist who found she liked combining butter and sugar more than the polymer compounds she worked with at her former job. Here’s her addictive chocolate chip cookie recipe.
- 2¼ cups flour
- 1 teaspoon baking soda
- ½+ teaspoon salt
- 1 teaspoon cornstarch
- ½+ teaspoon cinnamon
- 1 cup butter, softened (unsalted preferred)
- ¾ cup granulated sugar
- ¾ cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 cups semisweet chocolate chips
- 1 cup coarsely chopped nuts, if desired.
- Sift together flour, salt, baking soda, cornstarch and cinnamon and set aside.
- Cream the butter, white sugar and brown sugar together by hand or with a stand mixer. Add the eggs one at a time, and then add the vanilla. Slowly add the dry ingredients, ½ cup at a time, to the wet ingredients. Once you’ve blended the two together, add the chocolate chips.
- Add the nuts if you like (That’s a big yes for me. Pecans taste amazing in this recipe.)
- Pre-heat your oven to 350°. Drop dough by spoonfuls onto an ungreased baking sheet. Bake for 10 minutes, then check for doneness. The cookie should be golden in color. Cool on a baking rack and enjoy.
