Sweet Chemistry’s Chocolate Chip Cookie

Viti Prasad, the proprietor of the fictional Sweet Chemistry Bakery in Angel Harbor, is a former industrial chemist who found she liked combining butter and sugar more than the polymer compounds she worked with at her former job. Here’s her addictive chocolate chip cookie recipe.

2¼ cups flour

1 teaspoon baking soda

½+ teaspoon salt

1 teaspoon cornstarch

½+ teaspoon cinnamon

1 cup butter, softened (unsalted preferred)

¾ cup granulated sugar

¾ cup packed brown sugar

2 eggs

1 teaspoon vanilla

2 cups semisweet chocolate chips

1 cup coarsely chopped nuts, if desired.

Sift together flour, salt, baking soda, cornstarch and cinnamon and set aside.

Cream the butter, white sugar and brown sugar together by hand or with a stand mixer.  Add the eggs one at a time, and then add the vanilla. Slowly add the dry ingredients, ½ cup at a time, to the wet ingredients. Once you’ve blended the two together, add the chocolate chips.

Add the nuts if you like (That’s a big yes for me. Pecans taste amazing in this recipe.)

Pre-heat your oven to 350°. Drop dough by spoonfuls onto an ungreased baking sheet. Bake for 10 minutes, then check for doneness. The cookie should be golden in color. Cool on a baking rack and enjoy.
